Apple Cinnamon Muffin Binge

I had a craving for muffins today, and just had to whip some up. I ended up at the supermarket with no real direction, and waited for some inspiration. The apples in the produce department caught my eye, and I ended up with these beauties!


Okay, okay... I wouldn't exactly call these beauties either, I can never get those big mountainous muffin tops that I used to get before I switched to vegan baking... but these sure are damn tasty. Tasty enough to forget about their sad, stubby little tops. I kind of threw this together combining a few different recipes I had scanned over. I ended up with this recipe:

-The Dry Ingredients-
1-1/2 cups all purpose flour
1 cup whole wheat flour
3/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1-1/2 teaspoons cinnamon
1 teaspoon ground ginger

-The Wet Ingredients-
2 cups peeled & chopped apples
1/2 cup apple sauce
1 teaspoon apple cider vinegar
1 cup of non-dairy milk (I used almond this time)
1/3 cup canola oil
1 teaspoon vanilla

Preheat your oven to 375 F, combine your dry ingredients, the add your wet ingredients. Bake for 25-30 minutes. Then gorge yourself!

Avocado Pesto Pasta

I tried a new recipe for dinner last night, it was a recipe that I had stumbled across while perusing Chef Chloe Coscarelli's website. Chloe Coscarelli is the vegan chef that won Food Networks Cupcake Wars (Twice I think???). I figured if her cupcakes are so amazing, which they are... I've tried a bunch of her cupcake recipes with great success, then surely her savory dishes would be great as well!

This was such an easy recipe to make, all you have to do is boil some noodles, puree some veggies in your handy dandy food processor, combine and viola! Super delicious and super easy dinner! The creaminess of the avocado is just superb with pasta, who knew? Oh, I tossed in some sun-dried tomatoes as the recipe suggests, and it is not optional, it is freaking necessary! So Good!

Geekery Galore!

The husbo and I went to the Emerald City Comicon last weekend, and had such an amazing time! The guest list was epic this year, I.E. William Shatner, Brent Spiner, Jonathan Frakes, etc.  There were many tempting choices, but with limited funds I could only afford to choose one idol of mine, and of course I chose the one and only Brent Spiner! Data was my favorite character on The Next Generation, and it was so awesome to finally meet him in person.

I get extremely nervous meeting anyone I idolize. Too many times I have met people that I totally worship, and then they turn out to be complete jerks. I am happy to say that Brent Spiner is one of the nicest guys I have ever met, he is a big giant ball of personality! It was so refreshing! He even let me break the "No Flash Photography" rule and take a picture with him!


The rest of the Comicon was also a complete success, my husband found some action figures and bust ups he had been wanting, and we also got some posters for the house. I guess the Comicon has been doing better every year, and it is only going to continue to grow. I can't wait until next year! Who knows, maybe my fantasy husband Patrick Stewart will show up!

Ch ch ch ch changes.....

Oh man it has been a crazy past few months, but it is finally starting to feel like I am back on track. Soon the husbo and I will be moving into our own place in West Seattle, it will feel so good to finally have a place to nest! No, not "baby nest", are you nuts?!? Just personally nest. It feels like it has been awhile since I've really had a place that feels like home, that I can make my own. Also, the dogs are finally going to have their own yard which means no more puppy pads! That is reason for celebration alone!

I also am starting a new job this week, which I am super stoked about. I am going to be an Activities Assistant in a retirement facility, which is literally 3 blocks from my house. I am going to actually have a job with a decent wage, medical benefits, paid time off, and job security. I feel like such an adult! Which time will tell if that is a good thing or a bad thing ;)

Arrivals Tube Top

Tonight was round two of band t-shirt reconstruction. I found this awesome fold-over-able black elastic at Joannes, it worked perfectly for this Arrivals tube top. I really wanted to work on my Andrew Jackson Jihad t-shirt tonight as well, but my doggies just weren't having it. They were just screaming for attention tonight! Oh well, tomorrow's another day :)

Reconstructing Band Shirts

I finally found a cord that was compatible with my sewing machine! Yay!!! I had lost the power cord months ago, and have been searching for one ever since... Apparently the bins at Goodwill are the place to go! I took a whack at making a halter top last night during the snow storm. I know, I know... why I am making a halter top during a snow storm? It makes no sense. I should be curling up by a fire and knitting a scarf or something. But that would be the logical thing to do, and that's just not my style. Check it out!
